Sous Chef – Southeast Asian Cuisine

About the role

Wynn Al Marjan Island is seeking a Sous Chef specialized in Southeast Asian cuisine to lead daily kitchen operations for its upcoming integrated resort. The role involves menu development, team leadership, and ensuring the highest culinary standards.

Key responsibilities

• Oversee daily kitchen operations to maintain efficiency, consistency, and culinary standards.
• Monitor resource consumption, optimise equipment use, ingredients and inventory.
• Develop weekly set menus, monthly promotions and seasonal offerings with the Executive Chef.
• Ensure dishes are prepared and presented according to recipes, quality and plating guidelines.
• Lead, coach and support the kitchen team to achieve high performance and teamwork.
• Maintain cleanliness and hygiene in compliance with HACCP, health and safety regulations.
• Address guest requests and feedback promptly to enhance the dining experience.

Required profile

• Secondary school diploma or equivalent; culinary qualification preferred.
• Minimum 8 years experience in a 5‑star kitchen, with strong background in Southeast Asian cuisine.
• Proven leadership and supervisory skills, able to motivate and mentor staff.
• Excellent communication and interpersonal abilities.
• Strong organisational and time‑management skills for inventory, scheduling and daily operations.
• High attention to detail and full compliance with health and safety regulations.
• Flexibility to work shifts and adapt to changing schedules.
