Specialty Chef – Japanese

About the role

Radisson Collection is seeking a passionate Specialty Chef to lead the Japanese kitchen in its Dubai property. You will be responsible for delivering authentic, high‑quality Japanese dishes that meet brand standards and exceed guest expectations.

Key responsibilities

• Prepare and present Japanese dishes in line with approved recipes and brand standards.
• Take ownership of the Japanese kitchen section, ensuring smooth preparation, service, and consistent quality.
• Manage mise‑en‑place, stock rotation, storage, and par levels while minimizing food waste.
• Support food costing, inventory control, ordering, and overall kitchen expense management.
• Maintain the highest standards of food safety, hygiene, HACCP, and workplace safety.
• Assist senior chefs during busy services, functions, and events.
• Guide, train, and mentor junior chefs, fostering teamwork and professionalism.
• Contribute ideas for menu development, recipe standardisation, and continuous culinary improvement.

Required profile

• Strong passion for Japanese cuisine and culinary artistry.
• Proven experience in a specialty chef or similar role within a hotel or upscale restaurant.
• Leadership ability to inspire and develop junior kitchen staff.
• Commitment to delivering first‑class service and maintaining brand standards.
