Specialty Chef - Thai Cuisine

About the role

Anantara Hotels & Resorts is seeking a Specialty Chef to lead the Thai and broader Asian culinary offering at its flagship Anantara The Palm Dubai Resort. The role will drive authentic and contemporary Asian cuisine, ensuring exceptional guest experiences while upholding the brand’s high standards.

Key responsibilities

• Lead the preparation, presentation, and innovation of authentic and contemporary Asian cuisine.
• Organize all kitchen activities to ensure a safe, smooth‑running and profitable operation.
• Develop and maintain Asian cuisine concepts and standards for food preparation and plating.
• Monitor local market trends and recommend menu changes according to seasonal product availability.
• Research and introduce new Asian culinary trends, ingredients and techniques.
• Source and evaluate authentic Asian ingredients while maintaining food‑cost targets.
• Create seasonal menus and special promotions inspired by Asian culinary traditions.
• Train and mentor kitchen associates in Asian cooking techniques, ingredient knowledge and plating standards.
• Conduct regular tasting sessions to ensure quality and consistency of menu offerings.
• Collaborate with the Executive Chef on menu engineering and concept development.
• Adhere to Anantara food preparation and presentation guidelines.
• Maintain basic food safety and sanitation practices, including proper storage, rotation and dating.
