Assistant Director – Stewarding

About the role

Wynn Al Marjan Island, a new luxury resort opening in 2027, is looking for an Assistant Director – Stewarding to support the Executive Director in maintaining the highest standards of kitchen cleanliness, sanitation and operational efficiency across all food‑and‑beverage outlets.

Key responsibilities

• Assist the Executive Director in planning, scheduling and supervising daily kitchen inspections to ensure compliance with health, fire and HACCP regulations.
• Oversee maintenance, set‑up and tear‑down of banquet equipment, both stationary and portable.
• Manage inventory, procure supplies and equipment for the Catering and Culinary departments within budget.
• Support outlet operations with set‑up, teardown, plate‑ups and transport of items.
• Handle administrative duties, staff scheduling and act on behalf of the Executive Director when required.
• Develop and implement stewarding strategies, budgeting and forecasting for manpower, equipment and supplies.
• Collaborate with Food & Beverage leaders to align cleaning and hygiene practices with business goals.

Required profile

• Minimum 10 years (120 months) of experience in stewarding, food‑beverage or hotel operations.
• Proven ability to supervise large teams and manage inventory and procurement processes.
• Strong knowledge of health, fire safety and HACCP standards.
• Excellent organizational and communication skills in a multicultural environment.
