Assistant General Manager – Carbone Restaurant

About the role

The Assistant General Manager will support the Restaurant General Manager in overseeing daily operations and profitability of Carbone, a luxury dining venue at Atlantis The Royal. You will lead a diverse team, ensure high standards of guest service, and drive operational efficiency.

Key responsibilities

• Train, develop and schedule team members while maintaining compliance with SOPs and brand standards.
• Handle guest complaints, use feedback to improve service, and ensure a guest‑friendly environment.
• Control financials, manage inventory, and execute quarterly menu engineering using the designated tools.
• Maintain merchandising, display, and signage standards; monitor stock levels.
• Prepare sales and expense forecasts to set realistic profit targets.
• Recruit, hire and retain staff, managing conflict and resolving issues promptly.

Required profile

• 3‑5 years of experience in a similar role within a luxury hotel or upscale restaurant.
• Previous international experience is preferred.
• Strong team‑leadership abilities, high customer focus and the capacity to work under pressure.
• Hands‑on management style with a focus on employee retention and cost control.
