Assistant General Manager – Lebanese Restaurant

About the role

The Assistant General Manager will support the General Manager in delivering a fine‑dining experience at the Lebanese Restaurant within the upcoming Wynn Al Marjan Island resort.

Key responsibilities

• Execute daily shifts according to SOPs, ensuring consistency, timeliness and mise en place readiness.
• Control costs within approved budgets, supporting labour scheduling, inventory and cash handling.
• Develop and implement business strategies and promotions to maximise revenue and seat utilisation.
• Coordinate with the kitchen on menu availability, dietary needs, pacing and specials.
• Oversee reservations, waitlist and floor plans to optimise turn times and guest flow.
• Prepare daily shift reports, escalates issues and propose solutions to the GM.
• Provide personalised service to VIP and media guests, working with PR/VIP services.
• Supervise, coach and train supervisors, captains and service teams to achieve department goals.

Required profile

• 2–3 years leadership experience in fine‑dining environments, preferably with 50+ covers per day.
• Experience in Michelin‑recognised or Gault Millau restaurants is preferred.
• Strong product knowledge of Lebanese cuisine and wine; WSET Level 2 preferred.
• Secondary school diploma; Bachelor’s in hospitality management is an advantage.
• Fluent in English and another European language, with excellent communication skills.
• Experience in luxury 5‑star hotel or restaurant operations.

Required skills

• Proficiency with MS Office.
• Experience using POS software and digital reporting tools.
• Basic budgeting knowledge.
• Understanding of allergen management and food safety standards.
