Assistant Restaurant Manager - Bliss 6 Pool Bar

About the role

Conrad Dubai is looking for an Assistant Restaurant Manager for its Bliss 6 pool bar. The role supports the team in delivering seamless service, oversees daily operations and upholds the highest standards of quality and excellence, creating memorable guest experiences within the luxury hospitality team.

Key responsibilities

• Oversee pool bar operations, ensuring seamless service, efficiency and high standards throughout the guest experience.
• Anticipate guest needs, build genuine connections and resolve feedback or concerns professionally and warmly.
• Supervise pool bar colleagues during each shift and foster a collaborative, motivated team.
• Support staff appraisals, performance reviews, coaching and recognition, and strengthen beverage knowledge and service expertise.
• Hold daily briefings on occupancy, VIP guests, events, promotions and operational priorities.
• Support the Restaurant Manager in implementing policies, procedures and service standards, deputising when required.
• Drive sales through recommendations, cocktail and beverage upselling and poolside promotions.
• Assist with budgeting, revenue reporting, beverage cost control, stock monitoring and timely ordering with suppliers and Stores.
• Keep the pool bar, service stations, equipment and surroundings immaculate before and during service.
• Uphold health and safety, poolside safety, responsible alcohol service, hygiene, COSHH, risk assessments and audit requirements.
• Maintain accurate operational records, inventory documentation, cash-handling procedures and audit-ready records.
• Monitor performance against standards and handle disciplinary matters or grievances fairly and discreetly.
• Partner with resort departments to coordinate poolside service and maintain a polished guest experience.
• Keep impeccable personal grooming, appearance and hygiene.
