Chef De Cuisine Banquets

About the role

Atlantis The Palm, part of Kerzner International, is looking for a Chef de Cuisine for its banquets kitchen in Dubai. The role manages and organises all kitchen requirements to the highest standards, in line with standard operating procedures, and carries full responsibility for the kitchen's food cost and P&L.

Key responsibilities

• Manage and organise the restaurant kitchen to the highest standards according to standard operating procedures.
• Ensure proper hygiene and sanitation, adequate stock of working materials, inter-department coordination and staff training.
• Carry full responsibility for operating equipment, including inventory levels, and maintain the resort food cost and kitchen P&L.
• Enforce service standard procedures by directing, supervising and motivating staff.
• Communicate with guests and share their feedback with the chef in charge and management to maintain food and service quality.

Required profile

• Diploma in Catering or similar.
• 8-10 years' experience in a 5-star international chain or hotel.
• Minimum 2-3 years' experience in a management role such as a CDC or similar.
• Ideally experience in big-volume hotels or large banquet operations.

Required skills

• Comprehensive knowledge of HACCP and general health and safety in the workplace.
• Ability to multi-task and manage time effectively.
