Chef de Cuisine – Bull & Bear Restaurant, Dubai

About the role

The Chef de Cuisine will lead the culinary vision and operations of Bull & Bear Restaurant at the Waldorf Astoria Dubai International Financial Centre, a Forbes Five‑Star luxury hotel. Reporting to the Executive Chef, you will be responsible for delivering exceptional, high‑quality dining experiences that reflect the Waldorf Astoria brand standards.

Key responsibilities

• Develop and execute the kitchen’s business plan, monitor sales, food costs, profit margins and take corrective actions to improve commercial performance.
• Partner with the Executive Chef and F&D Operations to create innovative menus, concepts and promotions that drive revenue.
• Ensure timely preparation, presentation and service of dishes while maintaining strict food safety, hygiene and allergy protocols.
• Lead, develop and inspire a diverse kitchen team, managing recruitment, training, scheduling and performance.
• Maintain compliance with health, safety and hotel regulations, manage inventory, supplier selection and kitchen maintenance.

Required profile

• At least three years of experience as a Chef de Cuisine or equivalent in a luxury hospitality or steakhouse environment, preferably in the UAE.
• Internationally recognised culinary degree or diploma.
• Strong commercial awareness with proven ability to manage costs and achieve financial targets.
• Inspirational leadership and people‑management skills, capable of building an inclusive, high‑performing team.

Required skills

• Proficiency with Food & Beverage (F&D) management systems.
• Advanced Microsoft Office skills.
