Chef de Partie – Luxury Resort Kitchen

About the role

The InterContinental Fujairah Resort is seeking a motivated Chef de Partie to support the Sous Chef in delivering high‑quality culinary experiences for our guests. You will work in a dynamic, multicultural environment on the beautiful Al Aqah Beach, ensuring that every dish meets the brand’s luxury standards.

Key responsibilities

• Assist the Sous Chef in managing daily kitchen operations and achieving profitability targets.
• Handle food ordering, production planning, and stock management to meet service requirements.
• Support menu engineering and new product development to enhance guest satisfaction.
• Monitor food costs through accurate recipe costing, portion control, and waste reduction.
• Maintain consistent food quality, taste, presentation, and timely production.
• Ensure compliance with HACCP, sanitation, and workplace safety standards.
• Oversee proper storage, labeling, temperature control, and FIFO rotation of ingredients.
• Coach and mentor junior kitchen staff, providing regular feedback.

Required profile

• Proven experience in a hotel or resort kitchen environment.
• Strong understanding of food hygiene, HACCP, and safety procedures.
• Ability to follow standard operating procedures and brand standards.
• Excellent organizational skills and attention to detail.
