Commis 1 – Arabic Cuisine

About the role

The Ritz-Carlton Abu Dhabi, Grand Canal is looking for a Commis 1 specialized in Arabic cuisine to join its culinary team. In this full‑time, on‑site position you will assist in preparing special meals, maintaining high food quality standards, and supporting the kitchen during busy periods.

Key responsibilities

• Prepare special meals and substitute items according to recipes and presentation standards.
• Regulate temperature of ovens, broilers, grills, and roasters.
• Thaw frozen items in a controlled manner and maintain accurate food logs.
• Ensure proper portioning, arrangement, and garnish of dishes.
• Monitor food quality and quantity, informing chefs of excess items for daily specials.
• Communicate menu specials and out‑of‑stock items to service staff.
• Assist with hiring, training, scheduling, and performance coaching as needed.
• Follow all safety, security, and company policies, reporting any hazards or incidents.

Required profile

• Technical, trade or vocational school degree in culinary arts or related field.
• Minimum of 3 years of relevant kitchen experience, preferably in Arabic cuisine.
• No supervisory experience required.
• Ability to stand, walk, bend, lift up to 25 lb and perform repetitive kitchen tasks.
