Commis I - Luxury Hotel Kitchen

About the role

Fairmont Bab Al Bahr, a five-star beachfront luxury hotel in Abu Dhabi, is hiring a Commis I for its kitchen. The role supports the kitchen team in preparing food to standard, keeping the station clean and safe, and assisting the chefs during service and events.

Key responsibilities

• Prepare and cook food items according to standardized recipes, portion control and presentation standards.
• Complete daily mise en place so that all meal periods and special events are ready.
• Work independently within the assigned kitchen section while keeping consistency and quality.
• Monitor the freshness, quality and storage of food products using FIFO (First In, First Out).
• Ensure food is prepared and served to Fairmont quality standards and guest expectations.
• Keep workstations, equipment, utensils and storage areas clean and organized.
• Follow HACCP, food safety, hygiene, sanitation and occupational health and safety standards.
• Complete daily requisitions, stock control, temperature logs and cleaning records accurately.
• Minimize food waste through proper handling, storage and portion control.
• Support the Chef de Partie, Sous Chef and Executive Chef during à la carte, buffet, banquet and special event operations.
• Assist in training and guiding Commis II and Commis III colleagues, and take part in daily kitchen briefings and departmental meetings.
• Report equipment malfunctions, food quality concerns or operational issues to supervisors, and suggest menu and operational improvements.
• Perform other duties assigned by the Executive Chef or supervisor.

Required profile

• Sound knowledge of international culinary techniques, food preparation and kitchen operations.
• Thorough understanding of HACCP, food hygiene and sanitation standards.
• Good communication and interpersonal skills.
• Ability to work efficiently under pressure in a fast-paced luxury hospitality environment.
• Positive attitude with a commitment to delivering exceptional guest service.
