Commis II – Butcher (Restaurant)

About the role

Our client, a successful restaurant group in Dubai, is seeking a skilled Commis II – Butcher to support meat and poultry preparation. You will work closely with the Executive Chef, Sous Chef and Chef de Partie to ensure high‑quality, safe, and timely delivery of meat products in a fast‑paced kitchen.

Key responsibilities

• Assist in trimming, cutting, deboning and portioning meat and poultry according to standards.
• Inspect deliveries for quality, freshness and compliance.
• Prepare meat products following recipes, portion control and presentation guidelines.
• Maintain proper handling, storage, labeling and stock rotation.
• Keep the butcher section clean, organized and sanitized.
• Operate butcher tools and equipment safely.
• Monitor stock levels and support inventory control.
• Follow HACCP, food safety and hygiene procedures.
• Train and guide junior kitchen staff when required.

Required profile

• 2–3 years experience as a Commis Chef or Butcher, with at least 1 year in a professional butcher section.
• Culinary diploma or equivalent training.
• Good knowledge of meat cuts, portioning, trimming, deboning and storage.
• Ability to read, write and communicate in English.
• Strong attention to detail and ability to work under pressure.
• Physically capable of standing for long periods and lifting meat products.
• Willingness to work flexible shifts, including weekends and holidays.
