Commis II Butchery

About the role

InterContinental Dubai Marina, a five-star luxury hotel and residence in the heart of Dubai Marina with 328 rooms, suites, event space and restaurants and bars, is hiring a Commis II for its butchery. The role supports the culinary team in preparing dishes, from setting up food and equipment to assisting with mise en place.

Key responsibilities

• Assist with the preparation, trimming, cutting, deboning and portioning of meat, poultry and other butchery products according to kitchen requirements and standards.
• Ensure meat products are handled, labelled, stored and kept at the correct temperature, following HACCP and food safety standards.
• Take part in food pick-up, ensuring efficiency and quality while following HACCP standards.
• Support the Demi Chef De Parties and Chef De Parties in day-to-day operations and learn from experienced chefs.
• Maintain butchery equipment, tools and workstations in a clean, hygienic and safe condition, and keep the kitchen and butchery area organised and safe.
• Monitor the quality and freshness of meat products and report concerns on quality, storage or stock levels to the relevant chef.

Required profile

• Previous experience as a commis chef in a hotel or restaurant setting.
• Strong understanding of food safety and hygiene practices.
• Passion for food and cooking, with a keen interest in learning.
• Ability to work well in a team and communicate effectively.
