Head Pastry Chef – Multi‑Site

About the role

The Head Pastry Chef – Multi‑Site will lead pastry development, operations and team capability across several brands and the Central Production Unit for a fast‑growing hospitality group in Dubai. The role spans pre‑opening, launch and ongoing phases, requiring creative leadership and commercial discipline.

Key responsibilities

• Develop and standardise pastry and dessert menus for multiple concepts, creating recipe packs, costing sheets and SOPs.
• Support brand build‑up by reviewing BOH layouts, equipment specifications and pastry section workflows during fit‑out.
• Lead pre‑opening mobilisation, training pastry teams and ensuring launch‑ready product quality.
• Monitor cost, wastage and margin performance, working with procurement to secure quality ingredients.
• Maintain food safety, HACCP and hygiene standards across all pastry operations.

Required profile

• 7‑10 years of pastry experience in premium hospitality or luxury dining.
• Proven senior leadership in multi‑site or multi‑brand environments.
• Experience in pre‑opening projects, menu mobilisation and team training.
• Commercial awareness of gross profit, cost control and labor productivity.
• UAE or GCC experience preferred.
