Hygiene Manager - Ajman Saray A Luxury Collection Resort

About the role

The Luxury Collection is hiring a Hygiene Manager for its Ajman Saray A Luxury Collection Resort in Ajman, UAE. This full-time management position is responsible for verifying that operations comply with hygiene and food safety standards, advising on food handling practices and providing food hygiene training for new hires and trainees.

Key responsibilities

• Verify compliance with Marriott International's Brand Standard Audit (BSA) requirements across the property
• Advise and monitor food handlers on good handling practices and verify their observance
• Identify key risks in food operations and take preemptive remedial action
• Verify compliance with food and hygiene regulations, licensing conditions and codes of practice
• Provide technical advice on product labeling to meet government requirements
• Deliver in-house food hygiene training for new hires and trainees
• Handle customer and local food safety and health department enquiries on food hygiene matters
• Conduct daily kitchen inspections of personnel, environment and food hygiene, and record corrective action plans
• Inspect kitchen equipment regularly and ensure defects and non-conformities are fixed
• Coordinate cleaning programmes in all F&B areas and recommend improvements
• Work with purchasing and culinary leadership on vendor and internal BSA inspections
• Liaise with the pest control company and maintain hygiene standards and documentation

Required profile

• High school diploma or GED, or a 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration or a related field
• 4 years of experience in food and beverage, culinary or a related profession, or 2 years with a degree
• Preferred: Environmental Health or Culinary degree
