Sommelier – Luxury Fine Dining at Carbone, Dubai

About the role

As a Sommelier at Carbone, you will work closely with the Bar Manager and Wine Manager to maintain and enhance the wine programme. You will use your wine‑pairing expertise to recommend wines that complement authentic dishes, ensure proper service temperatures and glassware, and seize upselling opportunities to create memorable guest experiences.

Key responsibilities

• Update and rotate the wine list in collaboration with the Bar and Wine Managers.
• Order wines, manage stock levels, and ensure optimal storage conditions.
• Provide wine pairing suggestions for menu items and guest preferences.
• Serve wines at correct temperatures using appropriate glassware.
• Identify and act on upselling opportunities to enhance beverage sales.

Required profile

• Minimum two years experience in luxury restaurant or hotel wine service.
• Level 2 qualification from the Wine & Spirit Education Trust (WSET).
• International experience in fine‑dining, especially Italian venues, is a plus.
• Proven ability to prepare wine lists, maintain stock, and train staff.
