Sommelier - Steakhouse by Alain Ducasse

About the role

Wynn Al Marjan Island, the first integrated resort in the UAE set to open in 2027, is looking for a Sommelier for its Steakhouse by Alain Ducasse restaurant. The role sits within the resort's Beverage team and covers wine, beer and cocktail service, inventory and staff training.

Key responsibilities

• Greet guests warmly, communicate their needs to co-workers, kitchen staff and management, and take part in pre-shift meetings.
• Know every dish on the menu, its specifications and allergy information, and master the wine list, beer list and cocktail offerings.
• Build guest relationships to encourage repeat business and follow the standardised service sequence.
• Take part in regular inventory checks of wine, spirits, beers, mixers, glassware and supplies, update bin labels when wines move, and reduce waste through careful pour levels and storage.
• Train staff on wine service, beverage knowledge and presentation, and periodically run wine and beverage classes.

Required profile

• Minimum age of 21 due to alcohol service regulations.
• 1-2 years of wine service experience in a fine-dining or luxury hospitality setting.
• Basic sommelier certification such as WSET Level 2 or equivalent preferred.
• Fluent English; additional languages are an asset.
• Flexible with shifts and work schedules.

Required skills

• Wine presentation, pouring techniques and guest engagement.
• POS systems and handling cash or card transactions.
• Knowledge of beverage requisition, receiving, transfer and inventory control is preferred.
• Good understanding of hygiene, food safety, allergen awareness and responsible beverage service.
