Sous Chef – Bakery

About the role

The Sous Chef – Bakery will lead daily bakery operations at Anantara Mina Al Arab Ras Al Khaimah Resort, ensuring timely production of high‑quality breads, rolls, specialty baked goods and other items. The role combines hands‑on baking with team leadership in a luxury hospitality environment.

Key responsibilities

• Oversee the bakery section, coordinating production with kitchen, restaurant, banquet and catering teams.
• Prepare and supervise breads, rolls, doughs, specialty baked goods according to recipes and standards.
• Develop new recipes and innovative products aligned with guest preferences and business goals.
• Maintain equipment safety, cleanliness and proper maintenance.
• Supervise, train and schedule bakers and assistants, monitoring performance and adherence to SOPs.
• Ensure HACCP compliance, food safety, proper storage, labeling, rotation and sanitation of the bakery area.

Required profile

• Diploma or professional qualification in Bakery, Baking and Pastry Arts or related culinary field (preferred).
• 4–5 years of bakery experience, preferably in a hotel or luxury hospitality setting.
• Previous supervisory experience in a bakery operation.
• Strong leadership, organizational and communication abilities.
• Ability to work under pressure and manage multiple production requirements.

• Bread making, dough preparation, fermentation and baking techniques.

• Food safety knowledge, HACCP and hygiene standards.
• Inventory control and cost management.
