Sous Chef – Italian & Seafood

About the role

Wynn Al Marjan Island, the first integrated resort in the UAE slated to open in 2027, is looking for a Sous Chef to lead its Italian and seafood kitchen. The successful candidate will ensure the delivery of high‑quality dishes, manage daily operations, and support the culinary team in a fast‑paced, luxury environment.

Key responsibilities

• Oversee daily operations of the Italian & seafood kitchen, maintaining efficiency and consistency.
• Monitor resource consumption, control costs, and optimise use of equipment, ingredients and inventory.
• Develop weekly set menus, monthly promotions and seasonal offerings in collaboration with the Executive Chef.
• Ensure all dishes meet established recipes, quality standards and presentation guidelines.
• Lead, coach and support kitchen staff to achieve high performance and teamwork.
• Maintain cleanliness and hygiene in compliance with HACCP, health and safety regulations.
• Respond promptly to guest requests and feedback to enhance the dining experience.
• Carry out additional duties assigned by the Executive Sous Chef or Executive Chef.

Required profile

• Secondary school diploma or equivalent; culinary qualification preferred.
• Extensive experience (approximately 8 years) in Italian and seafood cuisine.
• Proven leadership and supervisory abilities.
• Strong communication and interpersonal skills.
• Excellent organisational and time‑management capabilities.
