Sushi Chef de Partie

About the role

The InterContinental Ras Al Khaimah Mina Al Arab Resort & Spa, a luxury beachfront resort on Hayat Island less than an hour from Dubai, is looking for a Sushi Chef de Partie. You will prepare sushi, sashimi and other Japanese dishes to a high standard, support seasonal and signature dishes, and work closely with the senior culinary team while maintaining strict food safety and hygiene.

Key responsibilities

• Prepare sushi, sashimi, nigiri, maki and other Japanese dishes to established standards, ensuring consistent taste, presentation, portioning and quality
• Support daily mise en place, food preparation, production and service in the sushi section
• Assist with seasonal dishes, menu development and new culinary creations
• Maintain HACCP, food safety, hygiene and sanitation standards
• Monitor stock levels, storage, food rotation and minimise food waste
• Support the training and development of junior team members
• Keep kitchen equipment, tools and work areas clean and safe, and work with the wider culinary team for smooth service

Required profile

• Previous experience as a Sushi Chef de Partie or experienced Demi Chef de Partie in a luxury hotel or premium Japanese restaurant
• Ability to work efficiently in a busy, high-volume kitchen
• Good English communication skills
• Culinary qualification or relevant certification preferred

Required skills

• Strong hands-on skills in sushi, sashimi, nigiri, maki and Japanese food preparation
• Good knife skills with attention to quality, detail and presentation
• Good knowledge of HACCP, food safety and kitchen hygiene
