Assistant Chief Steward

About the role

As Assistant Chief Steward at Anantara Downtown Dubai, you will oversee stewarding operations, ensuring all equipment, crockery, cutlery and glassware are accounted for and that the food‑and‑beverage areas remain clean and safe. You will lead a team of stewards, providing training on chemical handling, dishwashing equipment, and kitchen sanitation while upholding HACCP and local government standards.

Key responsibilities

• Control inventory of all kitchen equipment, crockery, cutlery and glassware.
• Supervise and schedule the stewarding team to maintain a clean and safe working environment for F&B operations.
• Train staff on proper chemical handling, dishwashing machine operation, and kitchen equipment cleaning.
• Oversee recycling, waste disposal and daily HACCP compliance.
• Conduct regular inspections and motivate the team to meet hygiene and safety standards.
• Produce inventory counts, loss and breakage reports using computer systems.

Required profile

• Proven experience in stewarding operations, preferably at a similar or Assistant Chief Steward level.
• Strong leadership and teamwork orientation.
• Computer literacy for inventory management and reporting.
• HACCP certification.
• Good knowledge of hygiene and safety procedures.
