About the role

The Banquet Chef De Cuisine leads the banquet kitchen of Waldorf Astoria Dubai Palm Jumeirah, ensuring flawless execution of large‑scale events, conferences, weddings and bespoke functions while upholding the hotel’s luxury standards.

Key responsibilities

• Design, develop and execute innovative banquet menus that reflect the brand’s luxury positioning.
• Create scalable, high‑volume menus while maintaining consistency, presentation and flavor integrity.
• Incorporate seasonal, sustainable and locally sourced ingredients where possible.
• Ensure menus meet diverse dietary, cultural and religious requirements.
• Oversee day‑to‑day banquet kitchen operations, coordinating with Events, Sales and F&B teams.
• Maintain HACCP compliance and local health, safety and hygiene regulations.
• Control food costs, portioning, inventory and waste to meet budgetary targets.
• Conduct regular kitchen inspections and implement corrective actions.

Required profile

• Minimum three years of experience in banquet or large‑scale kitchen environments.
• Proven ability to lead and train a kitchen brigade.
• Strong understanding of cost control and budgeting in a hospitality setting.
• Knowledge of HACCP standards and sustainable kitchen practices.
