Chef de Cuisine – Italian Cuisine

About the role

We are seeking an experienced Chef de Cuisine to lead our Italian restaurant at JW Marriott Marquis Dubai. The role combines hands‑on cooking with managing the kitchen team to deliver consistent, high‑quality Italian dishes.

Key responsibilities

• Oversee quality, consistency and production of all menu items in the Italian restaurant.
• Develop, design and update daily and seasonal menus, ensuring culinary standards and guest satisfaction.
• Manage purchasing, food costing, inventory and budgeting while maintaining profitability.
• Supervise and train kitchen staff, schedule shifts and ensure cross‑training for smooth operations.
• Enforce sanitation, food safety and all applicable health regulations.
• Handle special guest requests, banquet functions and decorative food displays.

Required profile

• High school diploma or GED with at least 4 years of culinary experience, or a 2‑year degree in Culinary Arts/Hotel Management with 2 years experience.
• Proven ability to lead a kitchen team, manage budgets and maintain high culinary standards.
