Chef de Cuisine – Luxury Hotel Kitchen Lead

About the role

As the Chef de Cuisine at Wavehouse, you will lead a high‑end restaurant kitchen within a 5‑star luxury hotel, ensuring the highest standards of food quality, hygiene and service. You will work closely with the executive chef and hotel management to deliver an exceptional dining experience for guests.

Key responsibilities

• Manage daily kitchen operations, including food preparation, plating and service.
• Maintain strict hygiene and sanitation standards in accordance with SOPs.
• Control inventory levels, order supplies and oversee equipment maintenance.
• Monitor and optimise food cost and waste to meet budget targets.
• Coordinate with other hotel departments and provide training to kitchen staff.
• Enforce service standards, supervise and motivate the culinary team.
• Gather guest feedback and communicate insights to the chef in charge and management.

Required profile

• Diploma in Catering or equivalent qualification.
• Minimum 10 years of professional kitchen experience.
• At least 2 years in a senior kitchen leadership role within a 5‑star luxury hotel.
• Proven ability to manage high‑volume, high‑quality kitchen operations.
