Director of Food & Beverage

About the role

The Fairmont The Palm, a luxury resort on Palm Jumeirah, is seeking an experienced Director of Food & Beverage to lead its diverse F&B portfolio. Reporting to the Hotel Manager, you will shape the guest experience across 11 outlets while driving profitability.

Key responsibilities

• Oversee day‑to‑day operations of all Food & Beverage departments, ensuring service standards are met.
• Develop innovative promotions, menus and concepts to attract hotel and external guests.
• Prepare and manage annual budgets, controlling food, beverage, labour and operating expenses.
• Support each outlet in achieving financial and operational targets.
• Lead recruitment, training and career development for F&B staff.
• Implement and continuously improve guest service standards and safety policies.

Required profile

• 7‑10 years of progressive leadership experience in luxury hotel food & beverage operations.
• Proven track record of managing multi‑outlet concepts in a union environment.
• Strong financial acumen with experience preparing budgets and controlling costs.
• Excellent communication and team‑building skills.
