Head Chef – Casa Mia Italian Cuisine

About the role

The Head Chef will lead the culinary operations of Casa Mia, an Italian restaurant within Le Méridien Dubai. Reporting to senior F&B management, the role combines hands‑on cooking with team leadership to ensure a consistent, high‑quality dining experience.

Key responsibilities

• Oversee daily kitchen operations, including preparation, cooking, and service for all guests.
• Develop, design and update menus and recipes that reflect Italian cuisine standards and brand identity.
• Maintain strict food safety, sanitation and temperature control procedures.
• Supervise and coach kitchen staff, conduct performance reviews and schedule shifts.
• Manage purchasing, receiving, storage and inventory to control costs and waste.
• Ensure compliance with all local laws, regulations and Le Méridien brand standards.
• Monitor equipment performance, report malfunctions and ensure proper maintenance.
• Implement environmentally‑friendly practices for energy use and waste management.

Required profile

• High school diploma or GED with at least 4 years of culinary experience, or a 2‑year degree in Culinary Arts/Hotel Management with 2 years experience.
• Proven ability to lead a kitchen team and deliver consistent, high‑quality food.
• Strong knowledge of food handling, sanitation standards and relevant regulations.
• Experience in menu creation, cost control and inventory management.
