Head Sommelier – Casea 101 Restaurant

About the role

One&Only Resorts is seeking a Head Sommelier to lead the wine program at Casea 101, an upscale restaurant within One&Only The Palm. The role combines expert wine selection, guest engagement, and team leadership to deliver exceptional beverage experiences for high‑profile guests.

Key responsibilities

• Manage all wine and beverage revenue for Casea 101, driving sales through curated selections and guest recommendations.
• Oversee the wine list development, purchasing, inventory control, and cost management.
• Train and mentor the service team on wine service standards, pairing techniques, and upselling strategies.
• Collaborate with the culinary team to create harmonious food‑and‑wine pairings.
• Maintain strong relationships with suppliers, distributors, and premium wine producers.

Required profile

• Minimum 2 years of sommelier experience in a 5‑star hotel or resort environment.
• Proven ability to manage a wine program in a high‑end restaurant setting.
• Excellent interpersonal and management skills, with a focus on delivering personalized service to diverse, high‑profile clientele.
• Fluent spoken and written English; additional languages are a plus.

Required skills

• Extensive knowledge of international wine regions, varietals, and vintages.
• Strong understanding of wine purchasing, storage, and cost control.
• Ability to train staff and lead a service team.
