Junior Sous Chef – Italian Restaurant

About the role

We are looking for a motivated Junior Sous Chef to join the culinary team at Isola, our upscale Italian dining concept in Dubai. Reporting to the Head Chef and Sous Chef, you will help ensure smooth kitchen operations, high‑quality food production, and consistent guest experiences.

Key responsibilities

• Support the Head Chef and Sous Chef in daily kitchen management.
• Supervise food preparation and service across assigned sections.
• Maintain recipe adherence, portion control, and presentation standards.
• Prepare mise en place accurately and on schedule for each service.
• Allocate duties, monitor performance, and coach junior culinary staff.
• Assist with menu development, seasonal specials, and new dish implementation.
• Monitor stock levels, assist with ordering, inventory, and stock rotation.
• Control waste and ensure efficient use of ingredients.
• Enforce HACCP, food‑safety, hygiene, and sanitation protocols.
• Communicate with front‑of‑house during service and handle dietary requests.
• Take charge of assigned sections in the Sous Chef’s absence.

Required profile

• 2–4 years of relevant culinary experience, preferably in an upscale restaurant.
• Previous experience as a Junior Sous Chef or strong Chef de Partie.
• Solid knowledge of authentic and contemporary Italian cuisine.
• Ability to work efficiently in a fast‑paced, high‑volume environment.
