Restaurant Manager – Italian Restaurant Tutto Passa

About the role

As the Restaurant Manager of Tutto Passa at Delano Dubai, you will oversee the daily operations of a vibrant Italian restaurant, delivering an elevated breakfast, lunch and dinner experience. You will work closely with the Director of Food & Beverage, culinary teams and the wider hotel leadership to ensure exceptional guest service and commercial performance.

Key responsibilities

• Lead the daily operation of breakfast, lunch and dinner services, maintaining high standards and seamless transitions.
• Manage floor operations, pacing, table optimisation and personalised guest engagement.
• Coach, motivate and develop the restaurant team, fostering a positive culture of hospitality.
• Monitor KPIs such as revenue, covers, average spend, labour productivity and cost performance.
• Handle guest feedback and service recovery promptly and thoughtfully.

Required profile

• Proven experience as a Restaurant Manager or senior Assistant Manager in a luxury hotel or upscale standalone restaurant.
• Strong à la carte experience, preferably within an Italian or Mediterranean concept.
• Demonstrated commercial acumen with ability to drive revenue and control costs.
• Fluent English; additional languages such as Russian or Italian are a plus.

Required skills

• Excellent interpersonal and communication skills for floor presence and team leadership.
• Ability to manage multiple service periods, staffing schedules and inventory control.
