Restaurant Manager

About the role

The Restaurant Manager will lead daily operations of the hotel’s restaurant, ensuring seamless service and an exceptional guest experience. This role reports to the F&B Director and works closely with the kitchen, bar, and other hotel departments.

Key responsibilities

• Oversee all restaurant activities, from opening to closing, to guarantee smooth and efficient service.
• Lead, train, and motivate the restaurant team while upholding the hotel’s high service standards.
• Conduct pre‑shift and post‑shift briefings, communicating priorities, promotions, and performance targets.
• Monitor sales, upselling, average check, and overall outlet performance; support menu development and revenue‑driving initiatives.
• Manage stock, inventories, wastage, and variances to protect profitability.
• Ensure cleanliness, hygiene, and presentation standards are consistently met.
• Coordinate staffing schedules, attendance, and daily manpower requirements.
• Maintain compliance with hotel policies, HACCP, health and safety regulations, and brand standards.

Required profile

• High School Diploma or equivalent; a college degree in Business, Hospitality, or a related field is preferred.
• 2–3 years of experience in Food & Beverage operations, including senior management responsibilities.
• Ability to obtain and maintain any required government licences or permits.
• Strong verbal and written communication skills in English.
• Proven ability to work independently and foster teamwork across departments.

Required skills

• Knowledge of Food & Beverage preparation techniques.
• Understanding of health department rules, HACCP, and liquor licensing regulations.
• Experience with bar operations and public‑contact roles in upscale or lifestyle‑brand hotels.
