Sous Chef – Specialty (Japanese/Peruvian)

About the role

Atlantis The Royal is seeking a Specialty Sous Chef to support the Chef de Cuisine at Nobu By The Beach. You will help maintain the highest culinary standards while delivering exceptional Japanese and Peruvian dishes in a luxury resort setting.

Key responsibilities

• Assist the Chef de Cuisine in planning, preparing, and presenting specialty menus.
• Lead and supervise kitchen staff to ensure consistent quality and service.
• Maintain strict hygiene and sanitation standards in all work areas.
• Manage inventory, stock levels, and ordering of ingredients.
• Coordinate with other departments for seamless service delivery.
• Provide training and mentorship to junior team members.

Required profile

• Minimum 5 years experience in a 5‑star international hotel or resort.
• 1–2 years experience in a similar role focusing on Japanese and/or Peruvian cuisine.
• Proven ability to work in a high‑pressure, luxury hospitality environment.
