Sushi Chef De Partie - Japanese Cuisine

About the role

Wynn Al Marjan Island is seeking a Sushi Chef de Partie to lead its sushi station, delivering authentic Japanese dishes in a luxury resort environment.

Key responsibilities

• Supervise daily sushi station operations, ensuring efficient service and adherence to quality standards.
• Prepare and present a variety of sushi and Japanese specialties, including nigiri, sashimi, maki, temaki, and specialty rolls.
• Manage freshness, storage, rotation, and HACCP compliance of all ingredients and perishable products.
• Monitor ingredient usage, portion control, inventory levels and food costs to support profitability.
• Train and mentor junior team members in sushi preparation, knife skills and product knowledge.

Required profile

• 3‑5 years of experience in a fine‑dining Japanese restaurant, luxury hotel or upscale hospitality setting.
• Strong knowledge of authentic Japanese cuisine, fish butchery, rice preparation and premium ingredient management.
• Understanding of HACCP principles, food safety regulations and sanitation practices.
• Experience supervising and developing junior culinary staff.
