Assistant Chief Steward

About the role

The Assistant Chief Steward will supervise and coordinate stewarding personnel, ensuring high standards of cleanliness, inventory control, and equipment maintenance within the hotel’s culinary operations.

Key responsibilities

• Supervise and coordinate stewarding staff, participating in shift activities as needed.
• Ensure proper washing, cleaning, drying, and storage of silver, glassware, chinaware, pots and pans according to established standards.
• Maintain cleanliness of work areas and upkeep of cleaning equipment.
• Prepare and verify inventory lists for banquets, both before and after functions.
• Monitor correct use of chemicals and detergents in the stewarding operation.
• Keep storerooms tidy and ensure uniform grooming standards are met.
• Report maintenance defects, safety hazards, and breakages through appropriate channels.
• Maintain shift logbooks and adhere strictly to cleaning schedules.
• Support the Head of Culinary with reasonable duties and foster team development, safety, and motivation.

Required profile

• Experience supervising stewarding teams in a luxury hotel or resort environment.
• Strong attention to detail and commitment to hygiene and safety standards.
• Ability to manage inventory, report issues promptly, and maintain accurate records.
• Leadership skills to build an efficient team and promote staff welfare.

Required skills

• Knowledge of professional kitchen cleaning procedures and chemical handling.
• Familiarity with inventory management for banquet operations.
• Understanding of health and safety regulations in food service environments.
