Assistant General Manager – Carbone Restaurant

About the role

The Assistant General Manager at Carbone will support the Restaurant General Manager in overseeing daily operations, profitability, and guest experience at this luxury dining venue within Atlantis The Palm.

Key responsibilities

• Train, develop and schedule team members while ensuring compliance with standard operating procedures.
• Maintain outstanding guest service standards, handle complaints, and drive customer satisfaction.
• Control financials, manage inventory, and execute quarterly menu engineering using the Menu Engineering Tool.
• Monitor merchandising, display presentations, and promotional programs, providing training as needed.
• Prepare sales and expense projections, manage staffing levels, and resolve operational issues.

Required profile

• 3‑5 years of experience in a similar role within a luxury hotel or upscale restaurant.
• Previous international experience is preferred.
• Strong team‑leadership abilities, high customer focus and capacity to work under pressure.
