Commis 1 Pastry

About the role

St. Regis in Dubai is looking for a Commis 1 Pastry to prepare breads and pastries, from making doughs and fillings through proofing, baking and decorating. The role also involves supporting the kitchen's food safety programme, keeping the chef informed about excess stock and following company policies.

Key responsibilities

• Review the production sheet to understand the baked goods to be made each day.
• Prepare and cook food according to recipes, quality and presentation standards and food prep checklists.
• Maintain kitchen logs for food safety compliance and follow food safety handling policies, including personal hygiene.
• Keep the chef informed of excess food items so daily specials can be planned.
• Use baking and measuring tools safely, check appliance and food temperatures and report issues to management.
• Monitor the quality of food prepared and portions served throughout the shift.
• Assist management with hiring, training, scheduling, evaluating, counselling, disciplining and coaching staff, and act as a role model.
• Follow company policies, report accidents and unsafe conditions, complete safety training and certifications, and keep a professional appearance.

Required profile

• Preferred: a technical, trade or vocational school degree.
• Preferred: at least 2 years of related work experience.
• No supervisory experience required.
• Able to move, lift and carry up to 25 pounds, work on uneven or slippery surfaces, reach overhead and below the knees, and stand, sit or walk for long periods.
