About the role
The Commis I – Level 52 supports the kitchen team at Marriott Hotels & Resorts in Dubai by preparing special and cold meals, managing food storage, and ensuring quality and portion standards.
Key responsibilities
- Prepare special meals, substitute items, and cold foods according to recipes and presentation standards.
- Regulate temperature of ovens, broilers, grills, and roasters and monitor food quality and quantity.
- Pull food from freezer storage, thaw in refrigerator, and maintain food logs.
- Ensure proper portioning, arrangement, garnish, and inform chefs of excess items for daily specials.
- Communicate menu specials and out‑of‑stock items to Food & Beverage service staff.
- Assist management with hiring, training, scheduling, evaluating, and coaching employees.
- Follow safety, security, and uniform policies and report maintenance or safety issues.
Required profile
- Technical, trade, or vocational school degree.
- At least 3 years of related kitchen or food‑service experience.
- No prior supervisory experience required.
- No specific license or certification required.
