Executive Chef – Prime 68 & Vault

About the role

The Executive Chef will lead the culinary operations for JW Marriott Marquis Hotel Dubai, overseeing multiple dining concepts and banquet services. This senior role combines hands‑on cooking with strategic management to ensure exceptional guest experiences across all food outlets.

Key responsibilities

• Direct daily kitchen operations across restaurants, bars, room service, banquets and employee cafeteria.
• Maintain consistent, high‑quality food production and presentation standards.
• Ensure strict adherence to sanitation, food safety and hygiene regulations.
• Manage purchasing, inventory control and cost‑optimization initiatives.
• Develop menus, control food costs and drive profitability.
• Lead, coach and develop kitchen staff, setting performance standards and conducting evaluations.
• Oversee support areas such as dish room operations and procurement.

Required profile

• High school diploma or GED with at least 6 years of culinary, food‑and‑beverage experience, OR a 2‑year degree in Culinary Arts/Hotel Management with at least 4 years of relevant experience.
• Proven ability to lead large kitchen teams in a luxury hotel environment.
• Strong understanding of all kitchen stations to fill gaps and maintain service continuity.
• Excellent organizational and leadership skills.
