Executive Pastry Chef

About the role

We are looking for an Executive Pastry Chef to lead the pastry, bakery, chocolate, confectionery and dessert operations at Raffles Dubai, a 5‑star luxury hotel. The role combines culinary direction, operational management and financial accountability to deliver world‑class pastry experiences across all hotel venues.

Key responsibilities

• Define the pastry and bakery vision, develop innovative desserts, pastries, chocolates and seasonal collections that reflect the hotel’s luxury identity.
• Direct daily production in all pastry areas, create production plans based on occupancy, forecasts and event requirements, and ensure timely supply to outlets.
• Maintain quality standards, portion control and waste minimisation while managing food‑cost performance and inventory.
• Lead menu development for restaurants, afternoon tea, banquets, weddings and VIP amenities, including signature and bespoke creations.
• Ensure full compliance with HACCP, food safety, allergen management and sanitation regulations.
• Train, coach and develop the pastry team, establish performance standards and support recruitment and career progression.
