About the role

Join the InterContinental Ras Al Khaimah Mina Al Arab Resort & Spa as the Head Sushi Chef, leading the culinary vision of the resort’s signature Japanese dining experience. You will blend authenticity, creativity, and meticulous craftsmanship to deliver unforgettable sushi and sashimi dishes for discerning guests.

Key responsibilities

• Lead all operations of the sushi kitchen, ensuring exceptional quality, consistency, and presentation.
• Design and develop authentic and innovative Japanese menus, incorporating seasonal and signature dishes.
• Oversee food preparation, production, and service to meet luxury hospitality standards.
• Coach, mentor, and develop the sushi kitchen team to achieve operational excellence.
• Maintain strict compliance with HACCP, food safety, hygiene, and sanitation standards.
• Manage food costs, inventory, purchasing, and waste control.

Required profile

• Proven experience leading a sushi or Japanese cuisine kitchen in a luxury hotel or resort.
• Strong knowledge of Japanese culinary techniques and ingredients.
• Commitment to food safety, quality, and guest satisfaction.
• Ability to inspire and develop a high‑performing kitchen team.
