Junior Sous Chef – Japanese Cuisine

About the role

Fundamental Hospitality is seeking a Junior Sous Chef to support the culinary team at KIGO, a high‑end Japanese restaurant located in Four Seasons DIFC, Dubai. The role focuses on delivering authentic sushi and Japanese dishes while maintaining the brand’s quality standards.

Key responsibilities

• Assist the Head Chef in daily kitchen operations, including preparation, cooking, and plating of sushi and Japanese menu items.
• Ensure all dishes meet KIGO’s presentation and taste standards.
• Maintain hygiene, safety, and food‑handling procedures in compliance with local regulations.
• Manage inventory, stock rotation, and assist in ordering supplies.
• Train and mentor junior kitchen staff as needed.

Required profile

• Previous experience in a sushi or Japanese restaurant environment, preferably within a high‑end concept.
• Fluent in Japanese and English.
• Currently residing in Dubai or willing to relocate.
• Passion for Japanese culinary techniques and a strong work ethic.
