Restaurant Captain

About the role

The Lana, a Dorchester Collection hotel in Dubai, is looking for a Captain for its Food & Beverage restaurant. The Captain is responsible for the day-to-day operation of the outlet, ensuring guests receive the best possible experience, while managing the team, revenue targets and costs.

Key responsibilities

• Oversee the day-to-day operations of the restaurant and ensure service standards are met by the supporting team.
• Greet guests assigned to your area, present the menu and recommend and upsell items.
• Keep the outlet immaculate and ensure all service standards are followed.
• Train and mentor the team of waiters so they can serve guests excellently.
• Monitor revenue targets and keep costs within pre-set budgets, including beverage cost.
• Take part in a daily pre-service team briefing and liaise with other departments on cleanliness, maintenance and presentation.
• Work with hostesses to optimise reservations and with the service team to control beverage inventory and quality.

Required profile

• Relevant professional certification or hotel school diploma.
• Wealth of past experience in luxury hotels and restaurants in the Middle East.
• Comfortable communicating in English, the hotel's primary language; Arabic, Italian, French, Spanish or German are highly desirable.
• Positive attitude, strong customer service ethic and ability to lead and mentor a team.
