Restaurant Manager – Mediterranean Concept

About the role

Join FIVE Hotels and Resorts as the Restaurant Manager for its flagship Mediterranean dining venue in Dubai. You will lead a dynamic team to deliver an immersive, high‑energy guest experience that blends world‑class cuisine with vibrant entertainment.

Key responsibilities

• Oversee day‑to‑day restaurant operations, ensuring a seamless and immersive Mediterranean dining experience for guests.
• Manage inventory, supplies and equipment, maintaining optimal stock levels and minimizing waste.
• Enforce health, safety and food hygiene standards, conducting regular audits and ensuring compliance with regulations.
• Collaborate with the Executive Chef to develop and update a bespoke Mediterranean menu, incorporating seasonal and innovative dishes.
• Monitor financial performance, control costs, analyse sales trends and implement strategies to achieve revenue and profit targets.
• Recruit, train and schedule the food‑and‑beverage team, fostering a high‑energy, guest‑focused culture.

Required profile

• Minimum 3 years experience as an Assistant Restaurant Manager or Restaurant Manager in a luxury hotel or upscale Mediterranean concept.
• Bachelor’s degree in Hospitality Management or related field preferred.
• Flexibility to work varied shifts, including weekends and holidays.
• Fluent English communication; additional languages are a plus.

Required skills

• Proficiency with Microsoft Word, Excel and Outlook.
• Expertise in restaurant management software and point‑of‑sale (POS) systems.
• Strong knowledge of health‑and‑safety regulations and food‑hygiene standards.
