Restaurant Manager – Peacock Alley

About the role

A Restaurant Manager at Waldorf Astoria Dubai International Financial Centre will lead the day‑to‑day operations of Peacock Alley, the Cigar Lounge and Waqud Café, ensuring exceptional food, beverage and service experiences that reflect Forbes Five‑Star standards.

Key responsibilities

• Drive commercial performance of Peacock Alley, the Cigar Lounge and Waqud Café, meeting revenue, profit and guest‑satisfaction targets.
• Partner with culinary and beverage teams to develop innovative menus, drink and cigar offerings that reflect Forbes Five‑Star standards.
• Lead the team to deliver personalised, luxury service, manage VIP relations and ensure swift resolution of guest issues.
• Oversee budgeting, forecasting, payroll, inventory and cost controls while optimizing seating and upselling strategies.
• Ensure compliance with health, safety, licensing and brand standards through regular audits and operational oversight.

Required profile

• Proven leadership experience in luxury food & beverage venues, preferably in hotels or premium lounges.
• Strong knowledge of premium beverages, coffee, tea, cocktails and premium cigars.
• Commercial acumen with a track record of achieving revenue growth and managing costs.
• Inspirational people‑management skills, able to coach, develop and motivate high‑performing teams.
• Excellent communication and relationship‑building abilities with guests, senior leadership and internal partners.
• Strategic thinking and problem‑solving capability in a fast‑paced luxury environment.
