Assistant Bar Manager

About the role

Accor is looking for an Assistant Bar Manager in Dubai. The role covers planning, operations and administration of the bar, working closely with the Food & Beverage office and the Food & Beverage Manager, and reporting to the hotel's maintenance and health and safety requirements.

Key responsibilities

• Approve staff schedules according to forecasts and the staffing guide, and recommend hiring, promotions and dismissals to the Food & Beverage Office
• Take part in planning promotions, beverage purchases and pricing, and advise the bar on service matters and standards
• Monitor food and beverage cost of sale, provide consumption data for purchasing and help reduce stock holding
• Coordinate the bar's marketing and public relations activities, and stay aware of competitors, theme nights and pricing
• Report equipment problems to maintenance, keep the bar clean and sanitary, and supervise daily operations
• Define and run training programmes, train the team, and ensure correct handling of equipment
• Inspect areas daily before opening against a checklist, check expiry dates in fridges and stores, and enforce policies and procedures
• Approve requisitions for beverages, condiments and supplies against par stocks, create new drinks and menus, and handle bar complaints
• Maintain staff grooming standards, the bar database, music and lighting levels, and comply with fire, hygiene, health and safety rules
• Submit monthly overtime, daily logbook, expense control, weekly time schedule and yearly vacation schedules, and ensure NOCs for entertainers are accurate
