General Manager – Japanese Restaurant

About the role

Wynn Al Marjan Island is seeking a General Manager to lead its new Japanese restaurant. The role oversees all aspects of operations, from service and culinary execution to financial performance, ensuring the brand’s standards are met in a luxury resort environment.

Key responsibilities

• Lead restaurant operations, including service, culinary, staffing and financial performance.
• Drive revenue growth while controlling costs, labour productivity and profitability.
• Monitor daily performance, analyse KPIs and implement continuous improvements.
• Coach, develop and evaluate department heads and team members.
• Collaborate on menu development, promotions and guest personalization.
• Ensure compliance with health, safety, licensing and hygiene regulations.

Required profile

• 3‑4 years experience as General Manager or similar role in fine‑dining establishments with at least 50 covers per day.
• Secondary school diploma; bachelor's degree in hospitality management and WSET Level 2 are advantageous.
• International experience in trend‑setting markets such as Tokyo, London, Paris or New York is a plus.
• Strong leadership, communication and customer‑service orientation.

Required skills

• Proficiency with POS software.
• Advanced use of MS Office applications.
