Kitchen Technician

About the role

The Kitchen Technician will implement the Planned Preventive Maintenance (PPM) program for all kitchen and laundry equipment at The First Collection Marina hotel. You will ensure compliance with local authority requirements, HACCP standards, and maintain optimal operation of all hot and cold kitchen assets.

Key responsibilities

• Implement and schedule PPM for kitchen and laundry equipment, following local authority maintenance plans.
• Maintain records and coordinate with the hygiene manager to meet HACCP requirements.
• Perform repairs and routine maintenance on electric and gas kitchen equipment, including ovens, stoves, dishwashers, and coffee machine water filters.
• Service cold rooms, fridges, ice machines, and other refrigerated systems, logging daily readings.
• Conduct inspections of kitchen and bar areas, logging observations and addressing any issues.
• Liaise with and supervise external kitchen equipment contractors, ensuring standards are met.
• Maintain adequate stock of spare parts, tools, and ensure safe operation of all plant equipment.

Required profile

• Minimum 5 years experience as a Kitchen Technician in a 4/5* hotel environment.
• Strong knowledge of hot and cold kitchen equipment repair and maintenance, including chillers, freezers, dishwashers, glass washers, gas cooking equipment, and various ovens.

Required skills

• ARC welding and gas welding proficiency.
• HACCP compliance knowledge.
• Repair and maintenance of refrigerated systems (cold rooms, fridges, ice machines).
• Maintenance of kitchen appliances (ovens, stoves, dishwashers, coffee machines).
• Ability to perform routine inspections, log readings, and follow manufacturer recommendations.
