Restaurant Manager – Bull & Bear, Waldorf Astoria Dubai

About the role

The Restaurant Manager will lead lunch and dinner operations at Bull & Bear, the signature steakhouse of Waldorf Astoria Dubai International Financial Centre, delivering Forbes Five‑Star service and driving commercial performance.

Key responsibilities

• Achieve the restaurant’s business plan by managing budgets, forecasts, revenue management and cost control.
• Partner with the Executive Chef and F&B leadership to develop innovative steakhouse menus, wine and cocktail programmes, and promotional activities.
• Lead a high‑performing team, overseeing recruitment, training, performance management and labour scheduling while fostering an inclusive workplace.
• Ensure compliance with health, safety, food safety, licensing and luxury brand standards through regular audits and inspections.

Required profile

• Proven leadership experience in luxury food & beverage venues, preferably a premium steakhouse.
• Strong commercial focus with a track record of revenue growth and cost management.
• Excellent communication and relationship‑building skills with guests, VIPs and internal stakeholders.
• Ability to maintain the highest standards of service, grooming and professionalism.

Required skills

• Extensive wine knowledge, including varieties, regions, food‑pairing and premium service.
• Broad beverage expertise covering premium spirits, cocktails and specialty drinks.
• Knowledge of luxury food and beverage operations, financial management and operational controls.
