Specialty Chef – Sushi

About the role

Rixos Premium Dubai JBR, a luxury hotel within the Accor portfolio, is seeking a talented Specialty Chef – Sushi to join its culinary team. The role focuses on creating high‑quality sushi and Japanese dishes that meet the hotel’s premium standards.

Key responsibilities

• Prepare and present a wide variety of sushi, sashimi, maki, nigiri and other Japanese specialties.
• Select, inspect and handle fresh fish, seafood, rice and related ingredients.
• Maintain excellent knife skills and proper sushi cutting techniques.
• Follow food safety, hygiene, sanitation and HACCP standards at all times.
• Ensure proper storage, labeling, rotation and waste minimisation of food products.
• Keep the sushi preparation area and equipment clean and organised.
• Contribute to menu development and propose new sushi creations.
• Monitor food costs and control wastage while preserving quality.
• Collaborate with the Sous Chef, Executive Chef and broader culinary team.
• Train and mentor junior team members in sushi preparation and Japanese cuisine.
• Perform other culinary duties as assigned.

Required profile

• Proven experience in Japanese and Asian cuisine, especially sushi preparation.
• Strong expertise in delivering consistent quality, freshness and presentation.
• Ability to work in a fast‑paced, multicultural hotel environment.
• Professional and positive attitude.
