Assistant Chief Steward

About the role

The Assistant Chief Steward supports the Chief Steward in overseeing all stewarding activities within a hotel environment. This role ensures that kitchen, dishwashing, storage and back‑of‑house areas remain clean, hygienic and compliant with local food safety regulations.

Key responsibilities

• Assist the Chief Steward in supervising and coordinating all stewarding operations.
• Maintain cleanliness and hygiene of kitchen, dishwashing, storage, floors, walls, drains and back‑of‑house sections.
• Supervise cleaning and proper handling of kitchen utensils, crockery, cutlery, glassware, pots, pans and other equipment.
• Ensure correct operation and cleanliness of dishwashing machines and stewarding equipment.
• Monitor the proper use, dilution, storage and control of cleaning chemicals.
• Support compliance with HACCP, food safety procedures and Abu Dhabi hotel hygiene regulations.
• Oversee waste segregation, disposal and cleanliness of garbage rooms.
• Prepare duty rosters, allocate daily tasks and monitor attendance, grooming and uniform of the stewarding team.
• Coordinate with Kitchen, F&B Service, Banquet, Engineering, Housekeeping and other departments.
• Control breakage, loss and misuse of crockery, cutlery, glassware and kitchen equipment, maintaining accurate records.

Required skills

• Dishwashing machine operation and maintenance.
• Safe handling, dilution, storage and control of cleaning chemicals.
• Knowledge of HACCP and food safety procedures.
• Implementation of pest‑control measures.
